TORA’s story starts with a simple idea: take the techniques and flavours of Cantonese cooking and let them evolve. The kitchen team trained in classical dim sum folding and wok work, then built on it, pairing hand-pulled noodles and slow-roasted duck with modern plating and a cocktail programme that borrows just as freely from Chinese mythology as it does from the kitchen. The result is a menu that feels rooted in tradition but never stuck in it.

Our Chef
With over ten years of culinary experience, our chef has built a career rooted in the art of Asian cuisine, shaped by time spent honing his craft across India and the Middle East. His journey has taken him through some of the world’s most celebrated hospitality names, including Shangri-La, Four Seasons and Park Hyatt, where he refined a deep respect for precision, quality and the stories behind every dish.
His skills were further sharpened under the mentorship of Michelin starred chefs Kazuya Shimomura and Tan Kwang Aik, before most recently leading the kitchen at Amami Restaurant in Mellieħa. He has also stepped into the spotlight as a guest judge on MasterChef Malta Season 2, representing Lifestyle Group.
At the heart of his cooking is a passion for authentic flavours, fresh ingredients and traditional techniques, with fresh seafood as his ingredient of choice. He finds joy in striking the perfect balance of sweet, sour, salty, spicy and umami, blending traditional Asian flavours with a contemporary touch. Driven by creativity, exploration and a constant desire to learn, he brings that same spirit to every plate at TORA.
